Spicy muffins with amaranth
Ingredients:
4 eggs
120 g sugar
2 vanilla sugar
350 g cooked amaranth
1 teaspoon grated lemon peel
2 tablespoons lemon juice
1 tsp cinnamon
5 tablespoons sesame oil
100 g ground almonds
200 g wheat flour
Baking powder
150 ml of liquid yogurt
80 g raisins
80 g dried apricots
Instructions
Preparation: Mix eggs, sugar and vanilla sugar. Add cooked amaranth, lemon zest and juice, cinnamon, sesame oil and ground almonds and finally stir in flour mixed with baking powder, yogurt, the raisins and chopped dried apricots. Put mixture into greased muffin baking molds. Bake in preheated oven at 180 ? C for about 25 minutes Serve topped with bitter chocolate.
