Butterscotch Tarts

2 cups granola

1/4 cup sugar

6 tablespoons butter, melted

1 sweet potato, peeled and cubed

1/4 cup water

3 oz package butterscotch pudding mix (prepared according to package directions)

1 1/2 cups milk

Instructions

Preheat oven to 425 degrees. In blender, pulse granola, sugar and butter 5 times. Press into 4 greased 4" tartlet pans. Bake 3 min. Microwave sweet potato and water, covered, 3 min. Drain and mash. Stir in prepared pudding and milk. Divide among crusts. Chill 30 min.
