Cheesy Chipotle Polenta
4 cups chicken stock or broth
1 tsp chopped chipotle pepper
1 1/2 cups polenta (cornmeal mush)
1 cup each pumpkin puree and shredded cheese
Cooked chorizo sausage
Instructions
Bring broth and pepper to a boil. Stir in polenta, cook 5 min. Stir in pumpkin and cheese. Serve in bowls, topped with sausage. Serve with crackers, if desired.
