Melt butter in skillet, add onions and fry 3 minutes. Add celery, salt, pepper and hot water. Cover and cook 5 minutes. Add drained bean sprouts and meat. Mix thoroughly; cook 5 minutes.
Add the following mixture:
2 tbsp. cold water
1 tbsp. soy sauce
2 tbsp. cornstarch
1 tsp. sugar
Stir lightly. Cook 1 minute. Serve hot with fried noodles for chow mein.
