Fruit Cocktail Cake
2 c. plain flour
1 1/2 c. sugar
2 eggs
1 can (16 oz.) fruit cocktail or crushed pineapple
2 tsp. soda sifted with flour
ICING
3/4 c. brown sugar
1/2 c. evaporated milk
1 stick margarine1 tsp. vanilla
1 can coconut
Instructions
Put all in large mixing bowl and beat for 2 minutes. Bake in pan 13x9x2, well greased and floured, for 30 or 40 minutes at 300 degrees. (Put on top of batter, 1/4 cup brown sugar and 1/2 cup of chopped pecans if you want to.) Boil for 2 minutes. Add: Put on top of cake while hot.
