Hermit Cookies
3/4 cup soft butter
1 1/2 cup packed light brown sugar
1/2 cup light molasses
4 cups sifted cake flour
3 eggs
1 teaspoon salt
1 teaspoon cinnamon
1 teaspoon nutmeg
1/2 teaspoon cloves
1/2 teaspoon allspice
1/2 teaspoon mace
1/4 cup strong coffee
1 cup chopped nuts
1 cup raisins
1 cup currants
Instructions
Cream butter and sugar until light. Beat in molasses. Add eggs, one at a time, beating throughly after each addition. Sift together flour, salt and spices. Add to the creamed mixture alternately with the coffee, beating until smooth. Carefully fold in nuts and fruit. Line a 15 x 10 x 1 inch pan with waxed paper. Pour hermits in, smoothing carefully into all corners. Bake in 350 degree oven about 20 minutes. Turn out on rack and remove waxed paper. Cool and cut into bars.
