Coconut Pecan Squares
1/2 cup butter
1/2 cup dark brown sugar
1 cup sifted flour
2 eggs
1 cup light brown sugar
1 cup coarsely chopped pecans
1 teaspoon vanilla
Pinch of salt
1/2 cup shredded coconut
2 tablespoons flour
Instructions
Cream butter and dark brown sugar; mix 1 cup flour and press into a greased 8 inch square pan. Make sure corners are filled. Bake for 20 minutes in preheated 350 degree F oven. Beat eggs until frothy. Add light brown sugar, pecans, vanilla, salt and coconut that has been tossed with 2 tablespoons flour. Spread over baked crust and bake 20 minutes at 350 degrees. Cool; sprinkle with confectioners' sugar. Cut into squares.
