3 lbs. zucchini, cut in chunks (peeled
if large are used)
2 med. onions, chopped
1/2 stick margarine
1 can cream of mushroom soup
1 c. sour cream
1 box Stove Top stuffing chicken
flavor prepared as directed
Steam zucchini for about 5 minutes or cook in microwave until partially cooked. Drain. Meanwhile, sauté onions in margarine, remove from heat. Add cream of chicken soup, and sour cream. In greased casserole, layer 1/2 of zucchini, 1/2 of onion, and soup mixture and 1/2 of stuffing. Repeat layers ending with stuffing. Bake for 1 hour at 350 degrees.
