Dice the bacon and brown on stove. Drain most of the fat off add the onion, garlic and cook till transparent.
Spray crock with pam. Dump bacon mixture in crock, add the rest of the ingredients. Stir well. Don't drain the black eyed peas, dump them right from the can. Cover and cook on low for 3-1/2 hours to 4-1/2 hours. stir half way through ccoking to make sure you have enough liquid. if not add water 1/2 cup at a time. Sometimes this takes less than 3 hours.
