2 small packages (3 ounces each) lime-flavored Jello
1-1/4 cups boiling water
2 cups apple juice
1 can (1 pound) pear halves, drained
3 large oranges, peeled and sectioned
4 ounces Danish Blue cheese, cut in small cubes
Dissolve gJello in boiling water. Add cold apple
juice and stir well. Cool until syrupy. Pour 3
Tablespoons of the gelatin mixture into a
2-quart mold. Tip and rock the mold until the entire
inside iscoated. Chill until set. Dip orange
sections into remaining gelatin mixture and arrange in
a pattern in the mold. Chill until set. Dip pear
halves into gelatin mixture; arrange them in the mold;
chill until set. Combine remaining gelatin and Blue
cheese chunks; carefully pour into mold. Chill
several hours.
