Sugar Free Cheesecake
1-1/2 tsp. vanilla extract
3 tbsp. lemon juice
3 large eggs
12 packets aspartame sweetener (such as NutraSweet)
2 pkg. (8 oz. each) Neufchatel cheese
1/4 tsp. salt
3 cups reduced-fat sour cream
Lemon and lime wedges, optional
Instructions
Preheat oven to 350 degrees. In bowl with mixer at medium speed, beat cheese and sweetener until very smooth, approx. 3 minutes. Add eggs, one at a time, beating after each addition. Add lemon juice, vanilla and salt. Add sour cream until just blended. Coat an 8? springform pan with nonstick cooking spray. Line bottom with wax paper. Coat wax paper with nonstick cooking spray. Wrap the outside of the pan with a double layer of heavy duty foil to prevent seepage. Pour batter into prepared pan. Set pan in large roasting pan in oven. Fill roasting pan with 1? hot water. Bake 45 minutes. Turn off oven without opening door; let cake cool 1 hour. Chill until cold, 1 hour. Garnish with lemon and lime slices, if desired. Makes 12 servings. (174 Calories, 6 g.
