To prepare crust: Sift together the 2/3 cup flour, 2 tablespoons sugar and salt. Cut in butter until crumbly, stir in egg yolk, blending well. Press evenly onto bottom of 9 inch springform pan. Bake 350 degrees for 18 minutes. Reduce oven to 325 degrees. To prepare filling: In large mixer bowl, beat together cream cheese, 2/3 cup sugar and 1 tablespoon flour until creamy. Add the 1 teaspoon vanilla. Beat in the eggs and egg white until well blended. Stir in diced pears. Turn into cooked cooled crust. Bake in 325 degree oven about 1 hour and 10 minutes or until knife inserted just off center comes out clean. Carefully spread fudge topping over baked filling. Combine sour cream, powdered sugar and remaining vanilla; mix well. Swirl sour cream, powdered sugar mixture into chocolate. Return to oven and bake 5 minutes or more.
Chill several hours before serving.
